Little savory beef hand pies with flaky golden crust

Beef hand pies
Beef hand pies.

One bite, and she forgot her name.
Two bites, and she remembered mine – with a growl.

They say good things come in small packages – but I say they come in hot ones, sealed tight with a buttery golden crust and filled with secrets that steam when you bite into them.

These little savory beef hand pies? They’re not just food. They’re foreplay. Flaky, rich pastry that crackles under your fingers. A slow-simmered beef filling that’s tender, juicy, and just a touch spicy – like the kind of lover who doesn’t say much but knows exactly what to do with their hands.

I made these when she came home late. Blouse undone. Scarf in her pocket. The look that said I’m starving, but not just for food. I didn’t need to ask. I just handed her one.

She took a bite, groaned low, then reached for another… and not just the pie.

They’re dangerous little things, these hand pies. Easy to share, but once you’ve had one, you won’t want to. Perfect for late-night cravings, afternoon seductions, or that moment when words aren’t necessary – but food is.

So, roll out that dough, baby. Let your fingertips press each edge closed like a secret you’ll never tell. These hand pies don’t just feed the body – they ruin you for anything less.

Chef’s Tip: Brush the tops with a seductive egg wash spiked with a splash of cream for that deep golden glow. Want them to really moan? A sprinkle of flaked sea salt just before baking brings the flavor – and the anticipation – sky high.

Wicked Twist: Tuck a sliver of sharp aged cheddar or a kiss of chili jam inside each pie before sealing. It’ll melt slowly as it bakes – like heat building under the surface, waiting to explode.

Here is what you will need:

For the filling:

1 lb (450 g) ground beef
1 small onion, finely chopped
2 sticks celery finely chopped
2 cloves garlic, minced
1 carrot, finely diced
1 tablespoon tomato paste
1 teaspoon Worcestershire sauce
½ teaspoon dried thyme
¼ teaspoon ground black pepper
1 teaspoon salt
1 cup beef broth
1 tablespoon all-purpose flour (to thicken)

For the pastry:

1 package refrigerated pie crusts (makes 12 pies)
1 egg, beaten (for egg wash)

The all important how to:

Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
In a skillet over medium heat, brown ground beef, breaking it up. Drain excess fat. Add the onion, garlic, celery and carrot. Sauté until softened, about 5 minutes.

Stir in tomato paste, Worcestershire sauce, thyme, salt, and pepper.

Cook 1 minute.

Sprinkle flour over mixture, stir to combine. Add the beef broth and simmer until thickened, 4 minutes. Leave to cool slightly.

Roll out pie crusts and cut 12 circles (about 9 cm/3.5 inches). Place half the circles in a mini muffin tin or on sheet.

Spoon 1 tablespoon filling onto each crust circle. Paint the egg wash around the circumference of each pie then top with remaining circles, seal the edges with a fork.

Brush pies with remaining beaten egg. Cut a small vent on top of each pie to allow them to breath.
Bake for 20 minutes, or until crust is golden brown and filling bubbles. “I love these with brown sauce (HP) but hey, each to their own.
