Here is what you will need:
2 tbsp olive oil
4 boneless, skinless chicken breasts
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper, to taste
1 medium onion, finely chopped
3 cloves garlic, minced
1 cup chicken stock
1 cup heavy cream
3 tablespoons peri-peri sauce
1 teaspoon lemon Juice
2 cups cooked white rice
Fresh cilantro, chopped (for garnish)

The all important how to:
Leave the chicken pieces to soak in cold water for an hour or so, to wash the blood. Pat dry using paper towel and then season the chicken breasts with smoked paprika, garlic powder, onion powder, salt, and pepper. Rub the seasoning into the chicken to coat it evenly.

Heat the olive oil in a large skillet over medium-high heat place the seasoned chicken in and then sear for 3-4 minutes per side until golden brown.

Remove the chicken from the skillet and set to one side.

In the same skillet, add the chopped onion and minced garlic. Sauté for 2-3 minutes until the onions are translucent, soft and fragrant.

Pour in the chicken stock, scraping up any browned bits from the bottom of the pan. Stir in the heavy cream, peri-peri sauce, and lemon juice.

Simmer for 3-4 minutes until slightly thickened.

Return the seared chicken to the skillet, coating it with the hot sauce.

Lower the heat and let it simmer for 12 – 14 minutes until fully cooked (internal temperature 165°F/74°C).
Serve on white rice and dress with a little chopped cilantro.
